Abstract: Advanced glycation end-products (AGEs) are a complex and heterogeneous group of compounds that have been implicated in diabetes related complications. AGEs formed in the final stage of the Maillard reaction in foods. The molecular imprinting technology is becoming a versatile tool in constructing tailor-made molecular recognition elements. In order to separation and extraction of AGEs in foods, we synthesized molecularly imprinted polymer (MIP) with specific recognition property toward AGEs. Then, we evaluated the binding specificity of the imprinted polymer to AGE by HPLC with MIP-packed column. (author abst.)
